Dinner Reservations Times

We have been to the park multiple times and have already watched all the evening entertainment offerings on multiple occasions. This year we have decided to not take the time out to watch the shows, parades or fireworks. However, I was just wondering if anyone might have any suggestions for working our evening dining plans so that we catch a glimpse while we are eating? Are these places even open late? We will going to Cafe Orleans so is there a good time to sit out on the patio while Fantasmic is running? We will also be doing Wine Country Trattoria. Is it possible to see any of WOC from their upper level or do they only do dining packages at the evening seatings? Any chance of catching the parade from Plaza Inn? We generally don't eat in the park in the evening but this year I thought we might a little more often and it would be nice to coordinate with some of the offerings going on. Any one have any good advice for being in the right place at the right time at making it happen?
 
Cafe Oreans is not a good place to watch F!. You simply are not elevated enough to see over the crowd and down to the stage where a lot of the actions takes place.

River Belle Terrace though can be a good option. But sit near the entry walk and look for the tree that will obstruct your view. Show up about an hour before F! for a seat there and take your time eating. It is raised over the walkway in front of it but the view of the show is from the side.

WCT has barely any view of WoC, mostly because it's far away and there are a bunch of trees blocking the desired angles. But yes you can eat there without dining packages for dinner. You can sit at the Cove Bar for a bad angle but very close view. Cove Bar is in Ariel's Grotto.

Plaza Inn is CS so no reservation but a decent spot to see the high elements of the parade, through the gaps in trees. You can also get some decent fireworks views from here. Because the good seats are harder to get here, it should be easy for the parade when few people have this idea, but hard for for fireworks when people stake those tables out 60-90 minutes before with the same idea.
