Dinner recommendations at DTD?

DS and DDIL are coming to WDW with us in 2 weeks. Just yesterday, DS said they're going to Disney Springs that Sunday eve to eat and walk around. At this point, they're fine not making reservations, just eating CS. I only know Polite Pig, but they nixed BBQ and EET, but DDIL is not an adventurous eater, so that's probably out too. Actually, she was born and brought up in Mexico, so I was wondering if there are any good Mexican Food Trucks (I'm not too familiar with the food trucks-are the same ones always there?) DS would be comfortable with Mexican food also, or just plain sandwiches (maybe Earl of Sandwich?). Any recommendations?
 
Chicken Guy and Earl are favorites. You just can't go wrong with either.
 
There are two food trucks that might be of interest = 4 Rivers Cantina Barbacoa Food Truck and Cilantro Urban Eatery. I've heard good things about both - think you can find some reviews on YouTube. Frontera Cocina is a table service Mexican restaurant from celebrity chef Rick Bayless. It's run by the same operating company that does the restaurants in the Mexico pavilion at EPCOT. There's a bar area if they wanted to just pop in for some margaritas and guacamole or something. Just about every spot has a bar/lounge that accommodates walk-ups so could snack around if that appealed to them. Boathouse is a great option. I especially like sitting outside at the dockside bar on the water. They have a really extensive menu with a lot of options at a lot of price points. Reservations are available on the Disney system as well as Open Table but don't need one to sit at the bar or on the dock.
 
We love Jock Lindsey's. You can easily make a meal from the app menu and the theming is terrific. We also enjoy Pepe - the QS part of Jaleo.
 

There should be plenty of options to pick from at Disney Springs for a picky eater - if not into adventurous 'interntional' cuisines, there are always places like Rainforest and T-Rex that are kind of like Applebees/Fridays/Chilis general American food. Quick serve include Chicken Guy, DLuxe Burger, Blaze Pizza that are all generic American foods. Frontera Cocina is OK Mexican - it's not full Mexico authentic, but good. Paradiso also has some Mexican/Caribbean type dishes, Americanized. Art Smith's Homecomin' is a favorite for fried chickens and southern comfort dishes, and Summer House has good higher end Americanish foods and some healthier selections too that should suit a non-adventurous palate. House of Blues is also southern/American comfort food, with bar type foods at City Works and Splitsville (everything from burgers and chicken sandwiches, salads, and street tacos). Raglan Road is technically 'Irish', but the menu is vast and would relate to anyone looking for American foods - steaks, meatloafs, chickens, potatoes, etc...and is always a reliable spot with good food and entertainment too.

I've eaten at all - and don't have any bad reviews for any of them...they may not be my favorite restaurants of all time, but are reliable, decent quality and well cooked/seasoned. I also like Morimoto, Wine Bar George, Enzo's Hideaway, Polite Pig, Jock Lindsay's, and Boathouse. I haven't eaten at Paddlefish as I'm not a seafood person. Terralina is OK, Edison is OK, STK is OK, and Maria & Enzo's is OK - they just don't jump out at me so I often skip them.
 
Morimoto Asia, Jaleo and Wine Bar George all have CS/QS places beside the main restaurant if they want to do small plates at a variety of places.
 
Deluxe burger or Blaze pizza are both good.
EOS as a warning has made the sandwiched even smaller still good but if I had to guess maybe a 6 inch sandwich. Chicken guy lost my vote last year as the chicken tasted like cheap freezer chicken, never was before. Check for some recent reviews… I hope it was a fluke but another person in my family had it few days before us and said it was not good. Have not gone back so as I said maybe it was a fluke.
 
Thanks everyone! Now I have some great information. Cilantro Urban Eatery looks interesting, to me also. I thought the food trucks came in at 4:00, but I see the they're listed as 10:00 am. Is that correct?
