I have read multiple places that it is a good idea (a necessity even) to submit lunch mobile orders first thing in the morning to avoid missing out on the food/time-slot you prefer. What about eating QS for dinner?? Is it necessary to order way ahead?

Personally I recommend doing it early especially if you know where and what time you'd like to eat.
There were a couple of times that we waited and then we ended up having a later slot than we wanted.

So walking up to the counter and ordering what you want when you want is no longer a thing? Whats next, having to plan restroom breaks 60 days out? Come on Disney!

Can't disagree!
However, on my last trip this summer, the parks were super busy, but I was always able to get a prompt time on mobile order. I was especially surprised when I tried Satuli Canteen at 12:45-prime lunch time, and got a return time right away.
And at every resort QS I went to, they seemed to encourage ordering in person.

I doubt very much that you'll have an issue getting a mobile order time that you like on short notice at dinner time, but it's not impossible with the most popular places.

Woody's Lunchbox in particular can be hard to get right at lunch time, not sure about dinner. If you really want that particular location it couldn't hurt to secure a slot earlier in the day. Keep in mind that you can cancel or modify your order later if you change your mind - your payment won't be processed until you hit the "I'm here, prepare my food" button, so there's no real downside to getting a slot early, even if it turns out you didn't need it.

You can modify the time, or the items you order, or again, just cancel the whole thing.

The worst wait I've ever seen was about 3 hours, but this is rare. Crowded places will usually have a 30 minute to 1 hour wait, so check a few times in the afternoon to see when the windows are available.
