I have it! I have it! A new recipe I tasted last week and made this past weekend.
Curried Chicken Lettuce Wraps!
Don't let the title fool you. This is NOT spicy. I am from MN...spicy up here is salt and pepper. The curry did make me a little cautious about trying it, but it's only a little zing in the flavor and it blends in with everything else so don't be afraid!
1/2 C fat-free sour cream (you can use light or regular)
1/4 C fat free mayo (NOT Miracle whip - you need real mayo)
1 t ground curry powder
1 garlic clove, pressed
1/4 t salt
1/2 C diced celery
1 Granny Smith (or other firm tart apple), cored and chopped
1/4 C finely chopped red onion
2 C diced cooked chicken
1/2 C sweetened dried cranberries (Craisins)
12 Bibb/Boston/Butter lettuce leaves (about 1 head)
1/4 C sliced almonds (optional)
In bowl, combine sour cream, mayo, curry and garlic. Mix well. Finely dice celery and onion. Core and chop apple. Add celery, onion, apple, chopped chicken and cranberries to sour cream mixture. Mix well.
Using a large scoop, place one scoop chicken mixture onto each lettuce leaf. If desired, chop almonds and sprinkle over chicken mixture. Roll up and serve.
