dinner for one

Box of garlic and olive oil pasta (those 'side dish' kinds) and when it's almost done I throw in a handful of frozen cooked shrimp.

I keep frozen bay scallops and made-ahead garlic butter (butter, garlic, bread crumbs, white wine, parsley) in the freezer. I saute the scallops and then slice some of the frozen butter on top and stick in the toaster oven to broil. And boil some angel hair pasta.

BLTs, with the 'ready bacon'.

Salmon with seafood stuffing (I get at Costco, it's aleady portioned and I freeze individually). If I remember I take it out the night before and put it in the fridge. Then bake in the toaster oven. I'm happy with that and a salad.

Leftover protein on a salad. I add cheese and some nuts so it's more filling.

Quesadillas...plain cheese is fine...or you can add any leftover protein or veggies. Or chopped some fresh tomato and throw it in or on top.
