Dinner First Night at WDW Not in Parks

My mom and I arrive at Coronado on November 24th and not planning on going into parks that day. We are planning on checking in, unpacking and having dinner somewhere not in the parks.

Any recommendations for a nice first night not too crazy expensive dinner?
 
Check out the menu at Maya Grill right at Coronado. We enjoy eating there nearly every trip.
 
The menu does look awesome, but not sure my mom would enjoy it! Anywhere we can get a variety of things?

Let's just say my mom isn't the most adventurous eater..lol
 
I would check out either the polite pig or Wolfgang Puck express in Disney Springs. Much Nicer than average counter service and I love visiting Disney Springs on check in day.
 

I was actually just looking at DS and narrowed it down to Raglan Road or The Polite Pig!!!!!
 
The polite pig is really good BBQ. Not a lot of theming to go with, but the food is really good. Raglan Road is just a whole lot of fun when the band and dancers are there and the food is really good.
We usually stay at Boardwalk, so often, the first night, going to Big River Brewery and Grill is an easy option. Good food and beer is always a good combination.
Have not tried Homecomin' at DS, but keep reading great reviews and its on our list to try.
 
We always take our first day and do Disney springs and their restaurants it's a nice way to get Into the Disney spirit!
All the Disney shops and the Disney music that's playing every where...
