Dinner/Dessert package booking

We have a trip planned for Feb 2019. I made my ADR's last week, but noticed that most of the dessert or dinner/show packages were not yet released for Feb. (Other than the fireworks dessert party at MK which I booked)
How far in advance do these normally open up? Should I be checking daily now or not expecting them to open until maybe 60 or 90 days prior?
Most interested in Star Wars and Frozen dessert parties, and Lion King show/dinner.

The Epcot dessert party sometimes doesn’t open until within a couple months of date. It varies. I can’t remember when our Star Wars dessert party opened but it was definitely less than 6 months - maybe around 4 or so months before trip.
