how do we add the dining plan when renting through owner

The owner needs to add it to your reservation. You'll be asked to pay for it at check-in.

The owner will need to add it at least 48 hours prior to your arrival day. All persons listed on the reservation must be on the same plan for all nights. As Lynne M stated, you will pay at check-in.
