Dining Solo at family style restaurants

I have asked this on the restaurant board as well. I have a solo trip in December and I was thinking about going to Whispering Canyon or Garden Grill. How do they handle the skillets with a solo person?

I think they just put less food in the skillets.

I've been at Whispering Canyon and have seen them bring out a individual size skillet when only one person in a party was ordering the skillet.
