we requested a certain dining rotation for our upcoming 1/30 Fantasy. Is there a way to find out if we received this request before we leave or do we need to wait till we board the ship?

You'll find out what you got when you checkin in the terminal. It will be printed on your KTTW card. If it's not to your liking, check the Navigator you got in the terminal for where/when the dining changes are being handled and go there to see if they can change you.
