Dining reservations?

This time we want to make dining reservations at Antijitos for the Saturday night of our trip. (Last time we were at Citywalk for dinner on a Saturday night [2 years ago] every restaurant told us at least an hour long wait.) Disney has me conditioned to make reservations 180 days in advance, and it is clear that's not the case at Universal. When should I expect to be able to make dining reservations and when should feel they need to be made?
 
I just asked about making reservations for Emeril, and was told 2 wks out was plenty of time.
 
Antojitos books through NexTable (not Open Table like some of the others) and it looks like it's booking through March 20th now, so I'd try about a month out from your trip although you could probably do it a few days before and be fine. FWIW, we ate there on a Friday night this past November around 5pm and had no wait. We were early in the night but even by the time we were leaving, there were many empty tables. Didn't need reservations at the time.

Was there a special event on or something that it was so busy that every restaurant was an hour wait?? Wow!

We have never made a reservation for dinner......ever.......even on busy nights longest we have waited was 20 minutes.

You definitely don't need to make reservations anywhere near as far about as Disney.......I know some people make them same day from the booth in Citywalk. Or use nextable.com couple of weeks out if you wanted to.

I don't know, but we ended up going offsite. It was 6 pm on the Saturday before Labor Day so that may have been it (I will also say the hostesses were not very kind about the wait and implied that we should have known to get reservations) and it was before the new dining options, but we'd never had trouble at CityWalk in our previous two trips and we were only a party of 2.
