Dining Plans What do you think???

I am looking for some feedback on the choices I have made for my upcoming trip. It is going to be myself, my husband, and my mom. I know, I know...my DH is a good sport for agreeing to go on vacation with my Mom! He really likes my family though...honest...

Anyway, we will be there for 6 nights. The first night at WL and then the next 5 at BLT

We arrive really late on Oct 5th, so we will have no dining plans that day. The rest of the plan is as follows:

Oct 6th - Whispering Canyon Cafe 8 PM
Oct 7th - Kouzzina 8:00 PM (we originally had one at Tutto Italia, did I make a mistake canceling it??)
Oct 8th - Cape May Cafe (breakfast) 9:50 AM
Kona Cafe 7:30 PM
Oct 9th - Boma 7:40 PM
Oct 10th - Liberty Tree Tavern 8 PM

We just booked this trip a few weeks ago and with the free dining our choices for ADRs were very limited. Is there anything you think we are missing??

My Mom and I are seasoned Disney travelers, but my husband has only been once 10 years ago and never even went to the Magic Kingdom I want him to have a great time so that he will grow to love it as much as I do and give in to the fact that I want to go at least once a year!
