Dining plan?

I will be putting a credit card on my room at check in to pay for things we buy throughout our trip.
How does Disney differentiate between the DDP and charging it to our room.
If we eat and add a few things not included on the DDP, how does this work?
What if I think the item is included in the plan but get charged for it?
What about mistakes made by CM? What if they charge it, instead of use DDP?

You tell the cashier/server whether or not you're using Dining Plan credits.

You get two bills, the second being for the items paid for in cash. (Note that an 18% gratuity is automatically added to such purchases.)

In case of mistakes, see the front desk of your resort for remediation.
 
We used our meal credits for lunch and supper. For breakfast we told the cashier it was a room charge (before she got the chance to punch in meal credits).

As far as our extras at lunch and dinner, I'd tell the server or cashier what we wanted for our meal credits. Then I'd tell them I wanted to do a room charge for our little boy's milk (he was not on the plan). His milk was always on a separate ticket. A couple places gave us milk for him complimentary.
 
You need to be very clear when you are paying. State "I am using 2 CS credits and charging this extra bag of chips to my room." Then CHECK YOUR RECEIPT!!! They do make mistakes. My friend was charged for 22 CS meals instead of 2. Because he noticed it immediately it was easy to fix. If he had tossed his receipt without checking he would have run out of CS meals on his second day and had no idea what the mistake was. Then his only choice would have been to waste time waiting in a long line at the resort to fix it.
The cashiers are just human and they do mess up!
 

You definitely have to be specific when handing your card to the CM whether you are using dining credits or room charge. The easiest way to tell if it is the dining plan that was used is the number of credits remaining for that type of service will be denoted on the bottom, if you do not see that then ask the CM immediately to maybe prevent having to go to the front desk of the resort. I did have a CM make a mistake, he knew we were on the plan because he reminded me that I got desserts but then when I got to the table I didn't see the number of credits on the bottom. I was a rookie at the DDP and wasn't sure if he had done it wrong but on check out day I found out. The only thing charged to my room was that one meal. It wasn't a big deal to me because we did use all of our CS meals so I would have had to pay for something anyway but it very clearly was a mistake and now it seems clear to me how to notice an error immediately.
