Can you purchase the dining plan for less than you whole stay?For instance A five day stay and only purchase the dining plan for the first three days.

No, you cannot unless you have two separate resort reservations (3 days + 2 days, separate confirmation numbers).

I have had them break my reservation up before. I did it for a much better price that was available for 3 of my nights, but the upside was I could split up my dining plan.
I would call before doing this to make sure it will not mess up your reservation or hotel.

No you cannot purchase the dining plan for some of your nights.
You could however do a split stay and book 2 reservations and only have the dining plan for one of the reservations.
