Next time we go to Disney we will be using the Dining Plan. We have the regular dining plan that gives you 1 quick service and 1 table service.

Are you able to trade your table service credit for a quick service credit?

Last time I used the dining plan (in 2014) we didn't want to use all of our table service credits, mostly because we like to use our time at the parks on rides and not waiting for table service.

Are you still able to do this?
 
You can use a TS for a QS meal. It's a pretty ineffective use of its value, particularly if you are paying for your Dining Plan.
 
You should see which table service restaurants you would enjoy eating at. You may be better off financially buying the quick service meal plan and paying for the table service meals you want out of pocket. This will also give you additional quick service credits.
 
As was mentioned, unless you go the DDP for free using TS credits for QS meals is a significant waste of money.
