Dining Plan - Not using up all TS with ADRs

Just wondering if we're insane doing this. We have dining plan for our upcoming Nov/Dec trip. We have scheduled ADRs for most of our table service meals except for two (2 adults and 1 child). We figure we'll save those until we get to WDW and see what hits our mood.

Are all table service places always booked up?

If you're flexible about where you eat (less popular places) and/or when (lunch and breakfast), you'll probably be fine. We're going next week (when the plan is free), and haven't had any trouble swapping lunch ADRs. Dinner is much harder, because people try to maximize the value they get, and dinners cost more.

It depends on where you want to eat. DH decided on Thursday evening (9/1) that he wanted to try Marrakesh the next evening instead of Garden Grill, so he called and had no problem getting an ADR for the next day. The restaurant wasn't terribly busy when we were eating either. People were being turned away from Liberty Tree Tavern (dinner) and 50's Prime Time Cafe (lunch and dinner).

We will be there around the same time. I made sure I had all of our ADR's set for "must-do" at Epcot's World Showcase. As the Candlelight Processional Packages are very popular and some of the times may be tough to get. We are a little picky with our times because we have a DS5. I just didn't want to chance it.

But, like so many here, I do tend to overplan.
