Do I have to use my park ticket in order to be able to use my dinning credits?

We will have 7 day Hopper tickets that come with our Sea/Land Package. We can't add dinning to those tickets. We will be comming back to WDW after the cruises for 5 days.

Can I book 5 nights at a resort and buy a one day park pass in order to buy 5 days of dinning? If so can we use our one day pass our last day as our other passes will have expiered?

No (you can use the dining credits at restaurants onsite but outside the parks).
Yes.
And yes.

You will need to book at package with Disney - add the one day ticket and the DDP. You can't just book a room and buy a ticket to add the DDP.

?? So are you saying that I would not be able to use the dining credits in the parks except the day I actually use the ticket in the park ??

You can use the credits from the moment you check into the resort until Midnight of the day you check out. At any dining facility that accepts them. You can skip the parks completely if you like.

So I could use my dining credits in the parks with my original hoppers and keep my one day hopper for some other trip?

Yes. I don't have personal experience with this, but others have reported doing just this with AP's or old tickets or whatever. Here's how it's supposed to work: you book your resort with one day base tickets (or parkhoppers) and the DDP. You use your room key to get in and out of your room, charge purchases and for all your DDP credits. You use your old 7 day parkhoppers for park admission. At the end of the trip, you keep your room keys (with one day base tickets on them) for a future trip. As long as you don't accidentally use your room key from your second stay for park admission, you will not activate and use up that one day ticket. Have fun!
