Dining Options at DLP for food-sensitive guests

Hello fellow Disney lovers! I've been to the World many a time but this is my first venture to Disneyland Paris and I am very excited :) I'm having quite a bit of trouble with their website; for instance I've only seen the chat option once, and now that I want to use it again it's nowhere to be found!

My main concern surrounds dining. I'll be traveling with my sister, who due to a previous illness has to be very cautious as to what she eats. It's not an allergy, so my message sent to the allergy concerns email on their website was rejected. But if my sister eats the wrong meal it can make her very sick. One of my base questions is this:

Regarding sit-down dinners, are the restaurants at all open to working with the customer. For example if my sister wanted a plain version of an entree or an adult-sized portion of a kids meal, would that be acceptable? I'm also concerned the the restaurant menus don't appear to be on the DLP website; I haven't looked into this yet but I'm hoping that the restaurants might have a website with their menu.

Any answers, suggestions, or recommendations would be greatly appreciated. Thank you all!
 
The differences in the parks shows up more in this area. I know at WDW would have the chef come out and speak to us about our son's diet. This doesn't happen at DLP as easily. I would always ask for the chef or the manager but understand that customer service is not the same as what you are use to.
 
In the EU restaurants have to tell you if food contains a certain 14 allergens (celery, peanuts, tree nuts, soy, milk, wheat and a few others I can't remember off the top of my head). You can ask for a restaurant to not out but sauce on food or leave off the celery but they only need to do it if it's relatively practical. In a kitchen where it's already made up and just gets heated up then it's unlikely you'll get much help other than being told the chicken/steak can be served plain with chips.

I was shocked the first time we came to Disney and we had chefs out talking to me and allergy flags on food for a simple tree nut allergy.
