From the reviews of the plan on the restaurant board, it looks like people are happy with the selection of restaurants and the peace of mind that having everything already paid for. They seem to feel that the option provides more than enough food, especially the sitdown meals that go from appetizer to dessert. Many report doing their dessert as a "takeout" because they are too full to finish them.
Most people feel that they got more than $35 worth of food each day.
The only problems reported seem to be with CMs at the restaurants who are not completely familiar with the system yet. By your trip in December, it should not be a problem. The CMs are still on a learning curve that I'm sure will peak by summer.
For 8 adults coming from another country, it would probably be worth opting into the dining addon. It would certainly take the guesswork out of figuring out how much money to bring to cover food. It also means not having to convert the $US into euros, pounds or yen in the back of your head just to understand what you're really spending.

As for the dining plan, I think it can definately be worth it. Especially if you are planning on doing some sit down dinners (without little ones I certainly hope so!!!) I believe that most of the trip reports I have read have stated that people using the MYW dining have gotten more than what they paid for out of the plan. You don't need to order the most expensive items to really get your $$$'s worth either! We will have the plan for 4 of our 7 day trip in December and I am really looking forward to it!!! (We are only staying at the Poly for 4 days and Hilton DTD for 3 days)
butchwheeler- I had asked this question too, in regards to DH and myself. What it comes down to, is how much you normally eat. Basically, do you eat $35 worth of food (personally) every day you are at WDW?
I first thought it was perfect for DH and myself- $35 X 2= $70 X 5 days= $350! I found we would save $20 a day on average with the dining option. I sat down and explained the plan to DH, and DH didn't buy into it. He brought up the valid point that the "mock" menus I had come up with were slightly far-fetched. We hardly ever spend $70 a day on food for the two of us. I guess I am a light eater, so it doesn't justify the plan for us.
