dining help

we have been to WDW several times and always had a dining plan, but this time we are doing a land/sea deal that does not provide the dining plan on land. What a bummer. Anyway, are there ways to get a discount, etc...we like to eat at nice places ie... Narcoossee's, Ohana, Le Cellier, choices for upcoming visit. Any ideas for "champagne taste on a beer budget", or do we just plan to spend $$$ !!?
