Dining for Vegetarians?

The WDWIG site has a large section on veggie-saurus options - click on Dining, then it's one of the links in the left-side list. :)

General advice - if it's one of the nicer (read $$$'er) sit-downs, call ahead a day or two before your visit. Lots of times, the chef will be happy to work with you and create something specifically for your tastes, vs. going with the possibly-good-but-likely-boring veggie option on the menu.
 
I've relied pretty heavily on the Vegetarian Guide to Disney and the Greater Orlando area book.
I guess I was just curious about any special dishes anyone would like to comment on.

We eat a lot of vegetarian at home and at WDW always need at least one "break" from the meat. We love Tusker House in Animal Kingdon. It is a counter service place, but there is some really nice outdoor seating. The grilled vegetable sandwich with a side of tabouleh is delicious, filling, refreshing, and reasonable. Kona Cafe in Polynesian had a vegetable stir fry that was pretty good. Have had some delicious salads with fruits, nuts, and cheeses that would suffice as a lunch--Columbia Harbor House and Cindy's, as I recall.
 

I am not a vegetarian but if no fish that I love is available I will always opt for just veggies. Beef and Chicken just don't do it for me. I have never, ever had a problem getting fresh, interesting, unique meals and without advance notice. The kitchens for all the sit down restaurants are well equipped and most chefs are happy to make something different to please you. California Grill has lots of options on the menu. At Bistro the chef came out to personally meet me and make suggestions. Even at the Yachtsman Steakhouse there was a great salad, and I barely mentioned to our waiter that I loved grilled not sauteed veggies and that I loved beets(beets were not on the menu) - voila - 15 minutes later a platter of grilled veggies-including beets! My son and hubby were happily devouring filets and I was the happiest ever!!! Just ask - you will be pleasantly surprised:Pinkbounc :Pinkbounc :Pinkbounc
 
I am a vegetarian and spent nine days at WDW last month...

Highlights....

The BEST dish I had was the vegetarian stuffed pepper at the 50's Prime Time Cafe....I have requested the recipe via email...no reply as of yet...it was AWESOME !!
Another winner for me was the salad at Whispering Canyon Cafe with the apple vinagrette...absolutely the best dressing I've ever had !!

Also good...in no particular order....

The vegetarian lo mein at the ABC Commissary (sp)?, the Coral Reef sandwich at Columbia Harbor House, almost EVERYTHING at Boma..(loved the Couscous Marrakesh), the veggie platter at Tangerine Cafe at World Showcase, Uncle Al's (?) vegetarian pasta at Whispering Canyon Cafe...(the only caveat here is that the sundried tomatoes didn't have "eye appeal"...they actually looked like some type of shellfish...)..try this dish with some crumbled blue cheese (if you are so inclined)..the vegetarian burger at Rainforest Cafe (Downtown Disney)...this burger was so "real" tasting...that I had to confirm with the server that it was in fact...vegetarian...thankfully...it was !

The one thing that I really didn't care for...was the vegetarian
sandwich at Hambari (AK)...it is huge on portabello mushrooms...which I really don't care for....you may love it
however.

I would also steer (excuse the pun) of the vegetarian chili at the Columbia Harbor house....way too much bread bowl...hardly any chili....
 
one more thing....my husband and I were FLOORED when we saw SOY CHEESE on the menu!!! Whoa!
