Dining at DLR

Okay, being so used to WDW, I'm thinking I'm going to have to start gearing up to make PS's for our DLR trip in June.

I know the Fantasmic Dessert is exactly one month prior and it's popular, kind of like the Princess Breakfast in the WDW castle. What about other places? I'm really thinking we would love Blue Bayou and Ralph Brennans. Should I be as religious about calling for reservations 60 days ahead as I am for WDW? Can you make reservations for DTD restaurants?
 
For a really special meal, I highly recommend Napa Rose at the Grand Californian. They have a wonderful menu that changes with the season, and one of the best wine lists anywhere. Michael Jordan (no, not that Michael Jordan:) ), the manager of the restaurant and the wine educator for all of DL resort, has really done an amazing job with Napa Rose. The entire waitstaff, along with some of the cooks and hosts, are certified sommeliers, so they can help out with pairing wines with your foods.

My husband and I eat there at least twice every trip to DL. It is not an inexpensive meal, but we enjoy it so much that we find it to be completely worth it.

We have done the Fantasmic Dessert Buffet - got seats on the front row on the balcony of the Disney Gallery - and really liked it. Some friends sat in the Premier Seating section down on the shore of the Rivers of America and loved it as well. We had to call exactly 30 days ahead. I got through at 9:04am (4 minutes after the lines opened) and we were already the fourth group making reservations. (On the balcony, they seat you in order of the reservations taken and there are three rows of seats. I don't know if they seat by reservation or by the first who shows up for Premier Seating.)
 
My husband and I went to the Blue Bayou on our anniversary. The food was excellent, though a bit pricey. I called almost exactly 60 days ahead because I wanted a reasonable dinner time (not 3:30 in the afternoon, etc). When we checked in I requested a table by the water, which was AWESOME! I would highly recommend it!
