before our date came up to start booking tours for the British Isles I kept watching the DCL for what tours are available
there were quite a few

so monday when our booking day came I went to book the tours

was surprised to see was quite a few there were listed on the website werent listed to be able to book its not as if they were sold out--if they were it said so

just curious as to why they took so many tours off

The general information page regarding excursions just lists the various excursions that DCL has offered in the past (and might offer again). The actual excursions available on a specific cruise are listed when you go through your reservation.

It's quite possible some excursions have not resumed since COVID.
 
The tour operators might not have any availability for your particular cruise. Since DCL doesn't do very many trips to the British Isles, the tour operators might prioritize other cruise lines ahead of them. Depending on what kind of tour, there are also other considerations. I was all set to book a hydrofoil trip to Capri on one of our Med cruises only to discover that it wasn't offered because apparently the waters are too rough at that time.

Keep checking back, though. On our Baltic cruise, new tours got added at various points and I ended up changing a few because of the new ones.
 
Sometimes the ship isn't in port long enough for some of the tours. It varies with different itineraries.
