Difference between Town car and Taxi?

Can someone explain the difference to me? Which do you prefer? Is a Taxi cheaper than hiring a town car? Are taxis easy to get as needed, or are they something you need to plan in advance? We need transportation to and from Universal, and also from Boma back to Coranado Springs one evening.
