Plane lands at MCO at 11 AM. Taking Magical Express to All Star Music, dump our bags if room is ready and then heading to AK via bus. Our first fastpass is 2:10. Is 3 hrs enough time?

As long as there aren't any delays, you should be fine.

Yes, you should be fine, especially if FP starts at 2:10, since it is good for an hr. till 3:10, so gives you even more cushion. All Stars are pretty close to AK as well, so not a long bus ride.
