Did I choose the right ADRs?

My family (my wife and I, my two sons 5,4 and my daughter 1) just hit 180 days before our first Disney World Vacation. I booked reservations and got everything I wanted this morning. My question is: did we make any mistakes or miss something? My family in general are early risers. Bedtime is 7:30 or so. In general we plan on leaving the parks at 1 or 2 for a rest at the hotel. I did not make any lunch ADRs I figure we will just grab quick service for those meals.

Pretty overwhelming to be making these decisions this early. On vacations, we normally just yelp a restaurant an hour before eating.

1st night - no reservation we get in late and will probably grab something from the resort cafeteria.

2nd night - Bier garten at 5pm. Planning on mostly visiting Epcot this day.

3rd day - 8:05 am Tusker house breakfast. 5pm at Sanaa. Planning on mostly visiting Animal kingdom this day.

4th day - 5pm Ohana. Planning on mostly visiting Hollywood studio this day.

5th day - 7:35am Chef Mickey's. Any possibility of catching the Magic Kingdom opening on this day? 4pm Hoop-Dee-Doo Musical Revue.

6th day - T-rex 5pm

7th day - Le Cellier 4:45pm

8th day - Be our Guest 5pm

9th day - The Crystal Palace 8am
 
Since I don't know the exact dates, I wasn't sure if your park choices were based on crowds. I know my kids would have a difficult time waiting until day 5 to get to the Magic Kingdom. Otherwise, since your family is early risers, this looks like a good plan. As far as your Chef Mickey day, the character meals usually run pretty close to an hour, so it will be close to make opening. I think you will probably be getting there a little late.
 
I would do Chef Mickey's on the 9th day and eat breakfast at the Magic Kingdom on the 5th day. Personally, my family loves Sleepy Hollow for their waffles for breakfast, bring up a pic online. Or you could move your Crystal Palace to that day only if you eat before the park opens. My family absolutely loves Via Napoli at Epcot. Have fun.
 
My DD was 5 last trip and wouldn't eat anything at Ohana for dinner except dessert. The meat is served from skewers with varying states of "doneness". None of it suited her and the veggies are quite spicy. That is the only thing that stands out.
 

You will be cutting it close to make it to MK opening (assuming it is at 9 am) from Chef Mickeys at 7:35 am but it's doable if they seat you right away. The characters move through the restaurant pretty quickly. There is a walkway from Comtemporary to MK that is faster than the monorail. It's tempting to get on the monorail at Contemporary especially because of its proximity 1 floor above Chef Mickeys, but after it stops at Contemporary, the resort line makes stops at the TTC, Poly and GF before it gets to MK so it's faster to walk. It's less than a 10 minute walk from Contemporary.
 
You may want to check the show times for Biergarten (if you're interested in seeing the show) and adjusting your ADR time accordingly. The shows last 25 minutes. It looks like based on your time now, the shows start at 4:45 and 5:55 (nearest to your reservation time). So, if you're seated 5-10 minutes late, you'd miss the whole show. We have a 5:30 ADR (with a 2 year old and 4 year old), so it gives us time to get seated a bit late and grab some food before the show starts at 5:55. Unless you're not interested in the show, then nevermind!

My 4 year old asked for a burger when we went to Ohana, it wasnt on the kids menu but she got her burger, the waitress didn't even flinch just said ok.
