DH has decided no seat down meal for Christmas. I need

When the kids were little I did a hot/cold buffet. I did a spiral ham, baked beans (crockpot), meatballs, spaghetti sauce and shell noodles (crockpot), chicken wings, chips & dips, cheese & crackers, veggies & dip, shrimp cocktail, seafood chowder (crockpot), etc. I also did a dessert bar with assorted cookies, brownies, lemon bars, raspberry oatmeal bars, etc. I worked out great!

We are doing this on xmas for our family gathering. Here is our menu

baked ham
rolls
jello pretzel salad - super yum!
baked brie
shrimp cocktail
fresh fruit with cranberry dip
cranberry relish dip with corn chips
veggies/dip
relish tray
pizza casserole - here's recipe http://www.thatsmyhome.com/mainstreetdeli/crescent-roll-appetizer.htm
mini quiche
hash brown casserole - here's recipe http://allrecipes.com/Recipe/Potato-Casserole/Detail.aspx

I love everyone's menus and want to try a few new ones, but I don't know if we need anymore.

I made buffalo chicken dip once with canned chicken and we didn't like it. I only use "real" cooked chicken now. We eat it with celery sticks and tortilla chips.

We are doing appetizers for Christmas Day this year, and I just made my grocery list last night. We are having:

Olive Cheese Bread (this is a baked bunch of gooey goodness)
BBQ Shrimp
Sausage, Cheese and Crackers
Harry & David Pepper Relish mixed w/cream cheese (served w/Tortilla Chips)
Deviled Eggs
Chicken, Pear & Gorgonzola Tarts
Wine, Hot Cocoa, Egg Nog

I did not make Christmas cookies this year, and decided I will make Cherries Jubilee over vanilla ice cream for our dessert on Christmas Day. That should be festive enough I am hoping!

For buffalo chicken dip, I use one or two boneless skinless breasts. You just boil them until they are ready to shred. Take out and shred and add to the rest of the ingredients. To me it tastes much better than canned.

They are also called tourtieres, which are Canadian meat pies. I've never made one, but my Mom mixes ground pork and hamburg, potatoes (kind of mashed) and seasonings and puts it in a pie crust. We usually put ketchup on it.

Maybe a Canadian Diser can give a better description of the ingredients?

We have them evrey Christmas eve at my Grandma's. She puts
Ground pork (fried-like taco meat) 12lbs of it
boiled potaoes

Then she bakes it in a pie crust.

We like to put mustard on the crust. Another fav. is pork gravy.

wow I have never had a complaint with my buffalo chicken dip using the canned chicken.:confused3 One of the girls I work with uses shredded chicken and its chunky unlike mine. Even she asked what kind of chicken I use and I told her the canned only. Its so much smoother and easier to dip the chips into. Maybe it depends what kind of chicken you buy put I doubt it because the flavor of the cream cheese, hot sauce and ranch are what you taste.

I was wondering what to do with this, I got 2 as Christmas gifts.
Thanks so much!

I love these ideas, won't use this for Christmas but sure will for New Years Eve. I am going to try to make the pork pies and the buffalo chicken dip, hashbrown casserole and lettuce wraps.
Keep the ideas, recipes coming. :thumbsup2

Cocktail Meatballs

Small frozen meatballs from Costco or BJs
1 can cranberry sauce
1 jar chile sauce
brown sugar about 1/2 cup (I usually just pour some in)
