Desserts for Diabetics

Anyone have any recipes you would suggest? I have to take dessert for Easter dinner this year and my husbands aunt was recently diagnosed so I would like to take something that she can enjoy too.

Really I would like to take some huge chocolate crumbly yummy dessert...but since I am in the process of changing the way I eat (yeah...avoiding that whole "DIET" word!)...I guess it would be better for me too to find a decent sugar free alternative.:rotfl:
 
We have a friend who has to avoid sugar and fat so when we have a party I always make him a batch of the Jello sugar free, fat free pudding in the chocolate flavor. I top it with a tiny bit of whipped cream. He always loves it!
 
We did worms and dirt for my MIL a few years ago for Mother's Day. I found sugar free "oreos" (although a different brand) at the store. I used the fat free, sugar free chocolate pudding. I used sugar free chocolate covered raisins to look like rocks. Then I decorated it with some sugar free candies like gummy worms and gummy flowers.

IME, most desserts that can be made for diabetics and will also be enjoyed by non-diabetics will things that are fruit-based, and perhaps a bit sophisticated. If you choose one of those you might also want to bring something simpler to appeal to children, unless of course you're letting the Easter Bunny cater that part of the event!
 

Strawberry Shortcake

I get a sugar free angel food cake (or maybe it is SF pound cake)
the SF strawberry gel
strawberries
cool whip

cut strawberries in slices
coat cake with gel and whip cream
place strawberries all over the cake
put lid on cake and put back in fridge overnight

it makes the cake really moist and it is SOOOOOO YUMMY!!!!
 
My DGF likes angel food cake with fresh fruit (usually strawberries) on top. I usually just buy him one at the grocery store, so I'm not sure how much sugar goes into it, but it might be a nice light dessert after a large holiday meal.

even the ones that are not sugar free don't ever shoot my numbers up so I don't think there is that big of a difference to be honest. I just always grab the SF one just because it is habit these days..LOL I have been known to "cheat" a time or 2..;) I can tell you that cheesecake is not very nice to your system if you are diabetic..I learned that the hard way at Kona Cafe..but OHHHHHHH was it soooooo good!! I'd do it all over again too...:laughing:
