We are having a large graduation party (about 75 people) in 2 weeks and I need to make a dessert. I usually make an eclair cake but I'm tired of it. Any recipes to share??? Thanks.
Chris I'm sorry I'm at work I'll post the recipe tomarrow. The quick version is I line a cake pan with graham crackers, I make French Vanilla Instant pudding and fold in Cool whip I pour it over the crackers then I layer more graham crackers, another layer of pudding and a final layer of graham crackers. On top of the final layer of graham crackers you make a spreadable chocolate frosting (using liquid Bakers chocolate and I think corn syrup) I post the particulars when I get home. You need to refrig it at least a couple of hours or overnight to let it set up. It does taste like an eclair and you can stretch it. Quick, simple and if you made several of them, you could probably serve 75 people.
