How funny that you should post this. I hosted our monthly book club on Thursday. The book we read was "Like Water for Chocolate." It's kind of a Mexican fairy tale. For refreshments I made banana quesadillas. I mixed one pound of cream cheese with one cup of powdered sugar. Then I broke 2 bananas into chunks and beat it with an electric mixer until it was pretty smooth. I spread about 1/4 cup on half of a flour tortilla, folded it over and pan fried it in butter. This recipe made about 10 tortillas worth, which I then cut into thirds. I served them by placing them on a plate, spooning caramel sauce over the top, cutting a ripe banana over it and a dollop of whipped cream as the finishing touch. They were DELICIOUS!!! Afterwards, I got to thinking you could adapt the recipe with any fruit. Strawberries or raspberries would be wonderful using chocolate sauce instead of caramel. Peaches would be good, too! I foresee a lot of experimentation this summer!
