Okay, I need a Signature restaurant - and I'm leaving in, hold on a minute... thirty-six days, give or take an hour!

Where I've already been:
California Grill
Jiko
Brown Derby
 
This is not an easy poll..... all of them are great, and I guess a lot depends on where else you are dining during your visit. But, if it was up to me, and I had only one choice, it's YSH for me. Now, my wife prefers Narcoossee's (and we have dined there the past 3 times).
But all of them are great, but very different/specific.
One more comment, again depending on our situation, if this was your only visit to WDW, the I would have to vote for the California Grille, just because you have to experience that at least once.

Now I'm tempted to revamp my entire plan and just do three Signature meals and pay OOP for my three sure-thing 'regular' ADRs... decisions, decisions...
 
I have done many reviews on Citrico's and have always had excellent service and a great meal. I would suggest trying a new restaurant for your trip as well. Enjoy.... Two restaurant mods here love Citrico's, hopefully the other will post here and tell you as well.
 
We loved the Yachtsman!!! It was AWESOME!!!
 
We have only eaten at Yachtsman, Narcoossee's and California Grill, and loved all three of them. It depends on the atmosphere you're looking for. CG is sort of the "grand" restaurant with the view, etc. Narcoossee's is more casual, with the beach right there. I think the fireworks view at both restaurants, while different, is about the same quality. Yachtsman is wonderful. We eat there twice every trip. You can see the Epcot fireworks over the pool, Boardwalk and Epcot are a short walk away, the atmosphere is amazing. You really can't go wrong!
 
I went with Artist Point. We loved it there. I would also think that Citricos would be a nice choice. While I know that Yachtsman Steakhouse is terrific, I would opt for something that I might not be able to get at home.
 
Good point, Diane. While I might not end up eating it if I choose Artist Point, I haven't been able to find a restaurant in the Boston area that serves buffalo (well, Ruth's Chris website says "seasonal", but I guess this isn't the season :))
 
We've eaten at Artist Point, Jiko, Calif. Grill, Flying Fish and Yachtsman Steakhouse. Since you didn't have our favorite, Flying Fish, on the list, I had to vote for Yachtsman Steakhouse. We have eaten there many times and had wonderful meals.
