I am throwing a fiesta-themed shower for a couple, and need a good recipe for a 120 oz pitcher. Normally in this case I'd do something with tequila, more lime-ish, or a sangria, but the person I'm throwing it for hates tequila and wines. She does, however, LOVE coconut drinks (esp. pina colada)...with a few stipulations:
1) can't require a blender or anything frozen except ice
2) no banana anything
3) no herbs/mint
4) coconut taste needs to be obvious
I know I could just do a typical pina colada in a pitcher, but was hoping to find something a little more interesting.
I've been taste testing various recipes (oh how I suffer for my friends,
), and while I love girly drinks, so many of them are still too crazy sweet for even me, are full of HFCS syrupy ingredients, or go the flip side to way too strong. It's amazing how hard it seems to be to find a simple medium.
Does anyone have a tried and true recipe they can pass on? I've searched high and low.
