Departure day breakfast timing?

I usually leave early on departure day, with a DME bus time in the 6:30-7:30 am range. Next trip, I may end up taking later flights that would give me a DME bus time around 12:20 pm. I would love to have a good breakfast on departure day and need some advice/reality check on timing this.

My thought is:
This would be a solo trip, staying at POP.
Get up, get ready for the day, finish packing up and clear the room.
Go to RAC and check 1 bag & get boarding passes.
Go to Luggage services and check carry-on bag there for the morning.
Catch MK bus and walk to Contemporary for breakfast at the Wave. (I love it, it's easy to get ADRs, and I never have a problem being seated early if I get there early.)
After breakfast, walk back to MK and catch bus back to POP.
Collect carry-on from Luggage svcs and be ready for DME pick up (~12:20)

For what time would you make the breakfast ADR?
If you do a departure day breakfast, what is your typical plan/schedule?
How long might I have to wait at Luggage services to retrieve my carry-on?

This would be in early February 2018 (yes, I'm already thinking that far out.)

We love a departure day breakfast, but we only do them at Cape May, because we stay at Beach Club. I don't think I'd want to have to travel somewhere- I'm always anxious on travel day and wouldn't want more to worry about. That said, if you do want to do it, I would get the earliest breakfast possible. But I'm not sure how early busses to the park run. So I'd probably plan on taking a taxi/uber directly to the contemporary.
