Has anyone does this? I can see from the pictures online that they have the stairs that lower into the water, which is something that a few in our group would need to use instead of the traditional ladder. On this particular one, would you have to snorkel or would you be in an area that would be acceptable to just stand/walk to interact with stingrays?

If it's the same place in thinking of your in waist deep water on a sandbar. Not snorkeling. You snorkel in areas before you go to the sandbar.

We used Captain Marvin's the day we went and we had to lower down into the water on the ladder and the water was about 6 feet deep, but then we made it over to the sandbar where the water is waist deep and the stingrays were all over us. It was very choppy that day in the water so you could go from 3 feet to 6 feet deep rather quickly.

I've used http://www.sotoscruises.com. It was a smaller boat but did have a ladder. The captain personally helped everyone get into the water but as others have stated, the water is fairly shallow and waist deep for most adults. You don't need to move as the rays will definately come to you. Our captain made sure everyone got as much interactive time with the rays as possible. The snorkling if we wanted to do it was after sting ray city.
Soto cruises was amazing and half the price of DCL and most others. I could not say enough about them.
Cayman islands does tend to get rough waters as they catch a good wind quite a bit of the time. Be prepared for that.

We did the regular DCL excursion in 2013. FWIW, when we got into the water, we DID need to swim a few feet to get to the sandbar. It was not far, but the water was over my head (now I'm only 5'2" - on a Good day.)

Just want to mention that the mid-size boat DCL used back then had too much draw to pull up into waist-deep water.

We did this excursion. From what I remember the steps are pretty close to the sandbar. The snorkel gear was helpful though because the water was quite choppy and it was easily over 3 feet.

I have done the deluxe excursion. The steps do lower down almost all the way to the sand, but this may vary depending on the tides.
