I am not a vegetarian, but all of the restaurants (table and quick service) have vegetarian options. And they are a lot more varied than just steamed vegetables. With this being the upper limit.
 
As long as you are ovo-lacto, WDW is very veg-friendly. You won't even need to make any special arrangements.

There are inventive, tasty veg options on most TS menus. The two restaurants you mentioned are great choices. Les Chefs de France is another good TS choice, especially if you like cheese. Sanaa, at the Animal Kingdom Villas, is an Indian fusion restaurant with a full veg menu and a great view of the animals on the savanna.

Veggie burgers are available at almost all CS restaurants. I forget if they're Morningstar or Boca, but they're decent basic veggie burgers. There are a few other options, but they're harder to find.

Columbia Harbor House at MK has a lovely hummus and broccoli slaw sandwich and veggie chili. Cosmic Rays has a veggie wrap.

AK is pretty light on options. It's pretty much cheese pizza, veggie burgers, or table service.

AT DHS, Backlot Express and Studio Catering Company both have grilled veggie sandwiches. Studio Catering Company has a nice Greek salad as well.

At EPCOT, Sunshine Seasons has lots of good options--salads, sandwiches, and stir-fries. World Showcase is full of great ethnic options--from potato goat cheese torte in Norway to a full vegetarian sampler platter in Morocco.

At Downtown Disney, Wolfgang Puck Express is a veg paradise. They have 3 wonderful veg soups (butternut squash is my favorite) as well as several salads, sandwiches, and pastas.
 
This thread should be of some assistance. Many of the contributers have written dining reviews; they're linked to in our signatures.

But anyway. Nearly every restaurant, be it counter or table service, will have a vegetarian option. These range from veggie burgers and salads and sandwiches at counter services to elaborate meals at signature restaurants. Check out the menus for places you're considering online to get an idea of what they have available.

The dining thread I linked to above should help with any places to avoid. Places that are known for being great for vegetarians include Tusker House, Jiko, Crystal Palace, Sunshine Seasons, and of course Victoria and Alberts.

Thanks everyone for your replies and the links (which I can never find when I try looking for them!)

But just a quickie, the link to the menu for la Hacienda at Epcot, does anyone know if that is the full menu? Because all of the entrees listed contain either meat or fish, and there doesn't appear to be any vegetarian option mentioned? If the only choice is to have one of the salads, I think I'll cancel my ADR and go elsewhere.

There is no vegetarian option on the La Hacienda menu. They may be able to make something fantastic upon request, but I'm not willing to risk it. I'll be cancelling my reservation as well.

BTW - There is a vegetarian menu at San Angel Inn. I think there's only two options, but you won't go hungry there if you're looking for Mexican food.
 
It is very easy to eat veg at wdw. In epcot morroco and sunshine grill (sushi, salads, stir fry...just yum lol) are my favorite. In mk my favorites are the bakery (tomatoe and mozz sandwich w/ basil) and columbia harrbor house (sandwich w/ hummus and brocolli slaw).
 
There were veg options on the menu at every single I ate in the world this past week. They looked pretty good, too. The selection at each restaurant isn't going to be large but they make sure to have at least one option at most restaurants.

I'm a vegetarian (eggs/dairy okay but no fish) and I had no problem eating on our recent trip. Actually, I had a hard time deciding where we would eat because there were so many good choices! The kids veg options are a bit limited, but we brought a lot of stuff into the parks for them.
 
Just FYI. I recently ate at La Hacienda, the new restaurant in Mexico at Epcot and just want to clear up something. The day we arrived was the first weekend that the restaurant was open and they had (that very day) created a vegetarian menu because of the feedback that they had received. My wife and I both are vegetarians and we ordered from the brand new (presented on a sheet of printer paper) menu. We enjoyed our selection very much.

They were so new to the idea of having a vegetarian menu that the menu states the dish came with rice and beans and they served it with just beans. When I asked why we did not received the rice, the manager told us that the rice they have is cooked in chicken broth. They were going to be changing that. Anyhow, we enjoyed everything we had at La Hacienda and wouldn't want anyone to pass it up because of word that there were no vegetarian options....

I've been a vegetarian for 16 years, my DH and children eat anything at all:rotfl:DS has a severe peanut allergy as well. Disney is very accomodating to our situation... just ask if there's any doubt at all as to what you can eat. I eat better there than I do at many other places we visit. It will be fine! My sister manages to eat very well in Disneyworld as a vegan with some simple requests, so vegetarians should have no problem.

Some of her favorites for CS -

MK - Columbia Harbour House veggie sandwich

Backlot Studios - Veggie Sandwich

Epcot - Sunshine Seasons has a variety of options and Morroco has some great options.

DHS - Not sure about this park.

DTD - Wolfgang Puck Express has a variety of good options

TS - All of the buffets always have some good choices and she's been able to work with the menu options everywhere pretty much. The one and only restaurant that didn't offer anything but the vegetable side dish as her entree was Liberty Tree Tavern and we've never been back there.
 
So glad to hear La Hacienda has added a veg menu! I had absolutely no trouble finding great veg options at all parks. My much-pickier veg daughter had a little more trouble, but there were always staples like cheese pizza available for her. The allears.net site a previous poster linked above was extremely helpful to me when I was making ADRs for my last trip- I was able to check out all menus ahead of time, which was invaluable!
