I've booked a Category 8 stateroom on Deck 5 right over the Walt Disney Theater. Does anyone know if you can hear what's going on in the theater in those rooms?

Only if it's quite loud. Most of the time, you will be out of your stateroom when something is going on in there. The only time I've really heard of a problem is when there is a late night showing of a loud premiere movie.

Correct me if I am wrong, but isn't the Walt Disney World Theatre where the shows are, not the movies???
If so, once the 8:30 show is out, wouldn't you hear nothing??
We are also on Deck 5 forward so I thought I had figured this out...

They have movies there too sometimes, particularly the ones that have just been released. That way, they can accommodate a bigger crowd. And they sometimes do midnight showings.

We were in cabin 5000 on the Wonder.
It was noisy during the shows.
You could hear the base viberating.

We were in 5504 and we only heard noise one night around 10:30 or 11:00 pm. I believe there was a movie premier. That was it. Otherwise, we enjoyed our cabin location--very convenient to the kids clubs!!

I was in 5016 last time and was woken up two mornings in a row by loud banging and cranking noises.
