December Cruise out of Galveston

We are cruising on the Wonder out of Galveston on December 11. It's been 6 yrs since we cruised DCL and never on a 7 night cruise. This one will be just me and my husband for our 25th wedding anniversary.
Need suggestions on things we can do/should do for this special trip. Also need information about dining nights since I heard there would be theme nights and formal/semi formal nights. How does the dining rotation work on a 7 night cruise?
I want to be prepared for this very special cruise.

You will rotate through the three restaurants -one each night. One night will be a formal and one a semi formal. The dress is at your option but on those night you will probably feel better with at least nice church clothes. I wear a black long skirt and a black sweater. My husband wears a nice pair of black pants, a dress shirt, mickey suspenders and a mickey bow tie. We do not take a coat for him. I would guess that about 15 % due formal attire, 70 % nice dressy clothes, and a few will not dress up at all. Your choice.

We're on the same cruise!

We'll be in each restaurant twice, and one, three times. Since it's your anniversary, I'd recommend doing the Palo brunch and/or dinner. Spend some time together in the spa, perhaps? There will be some fun couples type games in the clubs in the evenings.
