DDP for a diabetic?

My parents want to come with us to WDW on our next trip and want to do the dining plan. My dad is diabetic. DH and I and our kids were at WDW last month and on the dining plan. At each restaurant we ate, we noticed my father would do fine as far as entree (CS and also buffets because we did lots of character meals). But, for the dessert, I am not sure. If a TS restaurant does not offer a sugar-free dessert, could you request one when making the ADR? Do I just tell them to make note on the reservation that someone in the party is diabetic? What about at CS? I was able to get yogurt for dessert at Cosmic Ray's, and it ended up being sugar-free, but I only found this out after they gave it to me (no indication on the menu). That was the only sugar-free or no sugar added dessert, but again, it was not specified on their menu. Do CS locations typically have something as the dessert for a diabetic? For snack credits I know he can get fruit, bottled water, etc. Any other snacks sugar-free or no sugar added?
 
I believe they have a sugar free brownie. Make sure it is noted on all of your ADR's. I'm sure they will make a special dessert if they don't have one at the TS meals.
