DDP Differences? And a couple questions.

My DFi and I are heading to WDW some time in September for our honeymoon! Not sure when yet. Our wedding is August 29th, 2016.

Just wondering, because I thought I had read something somewhere about being able to swap out dessert for a salad on the DDP. I'm not a huge dessert person nor can I eat gluten, dairy, or eggs anyway, so is this actually an option? Also, I may be totally dense, but what are the differences you get with the Deluxe vs. Premium vs. Platinum?

As to the dessert swap, that's a definitely a grey area. For your TS meal, some restaurants may allow you to get a small side salad or a cup of soup or a side veggie instead of your dessert, but this is not spelled out anywhere, so it is up to the restaurant. I would certainly ask at every meal if you don't want that dessert, but they are not obligated to give you anything.

For QS, you can substitute any SNACK item on the menu for your dessert or drink. This IS spelled out on the brochure and has been done successfully by many, many people.
 
The Deluxe Dining Plan is a dining plan that includes 3 meal credits and 2 snack credits per night per person. Meal credits can be used for table service or quick service.

Sharonabe linked to an overview of the practical info on the Premium and Platinum plans. Both plans include the dining plan, but many additional activities. The pdfs linked below are the Platinum and Premium Plan brochures that list all the recreation, sports, tours and other activities to choose from. If you scroll past the dining info, the activities are described beginning on page 8 of the pdfs:

Also important to note at TS, these aren't menu items. They're specific to the swap out. So you don't get to hit the salad section of the menu.

Only some restaurants offer it. I wouldn't count on it in 90% of World Showcase, for instance, because those are operated by third parties.
