DDP Counter Service Suggestions?

We are going to WDW this summer and are on the Disney Dining Plan. I have the list of restaurants available from the website, but I was wondering if anyone has any suggestions for where to eat in each park. I want to get the most out of my dining plan $$. All of our ADR for Table service meals have been made, but we are having trouble deciding on where to eat in each park for our counter service options.

Any advice would be appreciated!!

At EPCOT the CS in China and Morocco are great!!! They're two of our favorites.

I was wondering more, WHY you would choose each of them. I have read the menus, but am more interested in what the food was like, was there a good amount, was dessert available, etc.
