DDP counter service includes dessert..what if one is not offered?

Everyone is always so helpful thought I'd ask a question..

I was looking at a menu for counter service in Mexico at the Cantina and noticed there wasn't a dessert listed.... How does that work with the dining plan? do they give you a ticket to use elsewhere or are you out of luck?

Yeah, I haven't eaten there but churro IS on the menu (around the middle, among the other choices and it is generally considered a dessert).

Similarly: Tangierine Cafe in Epcot allows only a piece of baklava as your dessert option on the DDP; Earl of Sandwich limits you to a cookie (officially, although some Guests have been able to get a brownie or a muffin top); Pepper Market limits your dessert 'options' to a cookie or, I think, a muffin.

Yes, it's a long, thin fried dough thing that's kind of chewy and rolled in cinnamon and sugar. They're really good. They remind me of the homemade doughnuts my grandma used to make with the canned biscuits if you've ever had those.

They also offer another dessert that was a really crisp cookie thing (it wasn't as good as the churro).
 
The turkey leg places haven't had desserts (unless it has changed recently) and if you used a CS for the it you just didn't get any dessert. I had a few cases where allergies kept me from being able to eat any of the desserts and I was often offered an extra side but that was probably just CMs being nice.
