Ddp and tips

I will be taking my family to wdw in September, and we upgraded to ddp. Since my wife and I have seven children, every meal will have an automatic 18% gratuity. My question is how is the 18% calculated? Do they charge 18% percent of the bill if I was paying cash? Thanks
