I'll start searching for some good beef recipes if you want. I'm trying a low carb Beef Burgundy tomorrow. I'll let you know how good it is.

1 Tbs. vegetable oil (I like to use Olive Oil)
1 red apple - cored and sliced into 1/2 inch wedges
1/4 C. dry white wine - or use apple juice and water 1/2 and 1/2
1/2 C. chicken broth
1/8 C. cider vinegar
2 Tbs. cornstarch
1 1/3 Tbs. Worcestershire sauce
salt and pepper to taste
Heat oil in a large skillet. Add chicken and brown on all sides. Add apple slices, saute 3 minutes, stirring occasionally. Add 1/2 the wine and chicken broth, reduce heat, cover and simmer 10 minutes. Mix remaining wine and broth together with remaining ingredients, add to skillet. Cook over medium heat, stirring constantly until sauce thickens.
I served this with a big green salad, and roasted red potatoes for my regular carb eaters. For myself, I roasted a small rutabaga. It was wonderful!

1 cup on plan ketchup (try to find the low sugar version, or homemade)
1 can Diet Rite Cola (Diet Coke with Splenda is also a good alternative)
Brown chicken breast for 3 minutes on each side, pour ketchup over chicken breasts and then add cola. Bring to a boil. Once boiling, cover and simmer for 45 minutes. Remove cover, remove chicken, increase heat and stir until thickened (forms a BBQ sauce). Spoon over chicken.
Here's the recipe for homemade sugar free ketchup:
1 6 oz can nsa tomato paste
2 Tbsp granulated Splenda, or about 3 packets
3/4 cup water
1/2 cup white vinegar
1/4 tsp onion powder
1/8 tsp garlic powder
Mix all ingredients together and simmer for 10 minutes. Set aside in container with lid and let cool. Store in refrigerator for up to 4 months.
