Hi everyone-
I just got back from my trip and will weigh myself tomorrow morning to see how i did while i was away--im a bit nervous, but gotta do it!
gonna get back into the exercising on Monday as well...did alot of walking on the trip and really didnt eat too much junk..i left at 142.5 , so well see what im at tomorrow

I served this with a big green salad, and roasted red potatoes for my regular carb eaters. For myself, I roasted a small rutabaga. It was wonderful!

I'm just in a big ole rut right now!! I have a wok and I do cook chicken that way, I also throw everything in the croc pot, but then I end up making chicken and dumplings, or noodles, not very ab friendly!!

I bought the South Beach Diet Book, tried making a chicken recipe from there, not too bad - I bought the Mrs Dash blend for chicken/salt free - I understand salt is not good!! (nor sugar or white flour!! :rotfl2: *uh, those are my staples mind you!!)

Off to visit DWLZ and WW for recipes!!
 
chicken cutlets

1 egg white, lightly beaten

ground oatmeal

curry powder, to taste

pepper, to taste

onion powder, to taste


Sprinkle chicken cutlets with seasonings to taste. Dip cutlets in egg white, then roll in oatmeal flour. Fry in a heated non-stick skillet.

(no white flour!! Oatmeal finely ground in a food processor is a healthy alternative to white flour, or so I've been told - but you need to count it as a carb, and only have so many carbs per day, in this recipe both the eggwhite and oats are small enough not to count!) oh and 2oz of chicken or turkey cutlet is considered a serving of protein!!

1 cup on plan ketchup (try to find the low sugar version, or homemade)

1 can Diet Rite Cola (Diet Coke with Splenda is also a good alternative)

Brown chicken breast for 3 minutes on each side, pour ketchup over chicken breasts and then add cola. Bring to a boil. Once boiling, cover and simmer for 45 minutes. Remove cover, remove chicken, increase heat and stir until thickened (forms a BBQ sauce). Spoon over chicken.

Here's the recipe for homemade sugar free ketchup:
1 6 oz can nsa tomato paste
2 Tbsp granulated Splenda, or about 3 packets
3/4 cup water
1/2 cup white vinegar
1/4 tsp onion powder
1/8 tsp garlic powder


Mix all ingredients together and simmer for 10 minutes. Set aside in container with lid and let cool. Store in refrigerator for up to 4 months.
 
6 boneless skinless chicken breast halves
8 small new potatoes, scrubbed
5 small onions, peeled and chopped
4 medium carrots, cut into 3" pieces
½ cup white wine ( Please be sure the wine you select is table wine rather than cooking wine, which is loaded with sodium. )
14 oz nsa chicken broth (nsa = no salt added)
1 tablespoon lemon juice
3 cloves garlic, finely chopped
1 teaspoon oregano
½ teaspoon thyme
¼ tsp black pepper
2 tablespoons fresh chopped parsley

Preheat the oven to 350 degrees. Arrange the chicken, potatoes, onions, and carrots in a baking dish. Mix the wine, broth, and lemon juice. Pour over chicken and vegetables.
Sprinkle on garlic, oregano, thyme and pepper. Bake uncovered 40 to 45 minutes or until chicken is fork tender. Turn veggies and chicken occasionally and baste with pan juices.
Transfer to a serving platter, arranging vegetables around chicken, and sprinkle with parsley.
 
1 pound chicken breast tenders
¼ teaspoon freshly ground black pepper
½ cup sliced onion
½ cup puréed raspberries
1 tablespoon red wine vinegar
1 tablespoon soy sauce substitute
1 tablespoon minced ginger or ground ginger
½ tablespoon dried rosemary


Sprinkle chicken with pepper. In a large nonstick skillet over medium-high heat, add onion and sauté 2 minutes. Add chicken to pan; sauté 8 minutes or until chicken is done. Remove onion and chicken from pan.

Add raspberries and remaining ingredients to pan; cook 2 minutes, stirring constantly with a whisk. Return chicken mixture to pan; cook 4 minutes, stirring occasionally.

Did y'all know that you can always subsitute any kind of fruit juice for Vegetable oil. It can really save on calories. It does not affect the taste at all. I usually have Apple juice available, but I have even used grapefruit juice and it works great! Just a little tip to save calories with no sacrifice.

Yes. My diet is really carb restrictive, and I just normally like to look for low fat things. When I stumbled across recipes from Leanne Ely, it was like a match made in heaven. Her recipes are so easy, and so delicious. For me, though, low carb is the most important thing, right now!

Thanks for the ketchup recipe! I've got a bbq sauce recipe I need to dig out. It is wonderful to use as a marinade for chicken or turkey. I'll look for it this afternoon!

That is GREAT to know! You learn something new on the DIS every day! I'll have to try it. I try to keep sugar free juice on hand for my kids, so I'm going to try this tip! Thanks again!

I hope you like it! I have a low carb beef burgundy cooking in the crock pot and it smells insanely good! If it tastes as good as it smells, this one will be a keeper and I'll pass it along.

Really? Cool! Phil never like when I cook in oil so I'll have to try this.
 
Wow, lots of recipes that sound soo good. We are trying to keep our carb intake to under 20g per day. It is pretty tough, but we've been sucessfull for 2 weeks now. That's right y'all we've completed 2 weeks and I haven't heard of any of us giving up yet. I only lost one pound last week, but at least I didn't gain. I really need to get moving on the exercise.

Does anyone have any recipes fopr smoothies??? They aren't no carb- but they are low fat- and I have a craving for something fruity!

I haven't tried this one, but it came in a Splenda recipe book I got:

Strawberry-Orange Smash

2 1/2 C. frozen unsweetened strawberries
1/2 c. Splenda granular
1 C. calcium-fortified orange juice
3/4 C. nonfat plain yogurt
1/2 tsp. vanilla extract
1/4 C. ice cubes

Place all ingredients in blender. Mix on low speed 15 to 20 seconds. Remove lid. Stir well. Cover and blend on medium speed until smooth. Pour into 4 glasses and serve immediately.

Serving size: 8 ounces
Calories - 100
total fat - 0 grams
Carbs - 21 grams
Sugars - 14 grams
