I only had a very small piece just to try it, I actually made it for my aunt.

Did you frost it? Cream cheese frosting comes to mind for me, yum!

Heidi - Your cake sounds yummy. It also doesn't sound like our zucchini cake. Ours is a chocolate cake which wouldn't be similar to the bread. Out wait, I've had a zucchini spice cake too. Okay, really, I just hope you'll share the recipe.

Beth - Happy soon-ish birthday to DH! I made some brownines similar to that (I'm guessing) not long ago and they were soo yummy! (We saw the add for them so I amended my brownie recipe.)

Deb - Just in case I miss you...have a great trip!! I'm sure the weather will cooperate!

Well, since we have 6 or 7 family visitors arriving in about 8 hours, I guess I had better get ready for them. Somehow I just can't get motivated though. I woke up at 6:50, which was an hour and a half later than intended, and have been running ever since. Yuck!

Zucchini Cake


2 cups flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 1/2 tsp. pumpkin pie spice
3 eggs
1 cup vegetable oil
1 1/2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
1 cup walnuts, chopped (optional)

Preheat oven 350º
Lightly grease 13x9x2 pan

Combine eggs, oil, sugar, zucchini and vanilla. Beat well.
Stir in flour, soda, salt, powder and spice. Mix well.
Bake for 45 minutes.

I never use nuts, and it can be iced with cream cheese frosting.

Wouldn't you know it...with just 5 days until our trip there is not one, but THREE tropical storms brewing in the Atlantic Basin. I sure hope that the weather in Cancun is okay. I NEED sunshine and white beaches.
