Well Colby is in bed and Hunter is not far behind. Chris went to the gym since 2 of us weren't feeling well he decided not to take the other 2 swimming so he waited for Colby to go to sleep to keep the peace. Hopefully I can get my workout in tomorrow after work.

My boss approached me again today and has offered (with prior approval) me the programs coordinator position for the water activities. I would be responsible for setting up and maintaining the swim lesson program. I would get a $2 raise, but only for the hours that I am doing that position. Lifeguard pay would remain the same. I'm reading through the new program materials. It is very different than the American Red Cross program that I've taught before. I think once I see the program demonstrated I will be able to do it

Anyone here Italian? I am in need of a good meat sauce for spaghetti. I have been using Prego for years but lately its been bothering John's stomach, I told him its all the Pepsi he drinks.

ME! My great grandparents came over from Italy. I have my mom's recipe in the kitchen. If you remind me, I'll post it for you tomorrow.

Is their hair starting to grow at all?

Oh yes, absolutely! It's actually kind of getting long, but you can hardly see it in pictures! Most people that meet them now are like, "Oh, they DO have hair! "

Here you go, Heidi. I don't have a meat sauce recipe, but I have my great-grandmother's sauce and meatballs recipes. Jen will verify, it's a good meal!

Spaghetti Sauce


Peel and finely chop one medium onion.
Separate 2 cloves from a garlic head and peel and chop finely.
Saute onion and garlic in 2 tablespoons margarine until soft and transparent but not brown.

Add two 12 ounce cans of tomato paste. For each can of paste, add two cans of warm water. Stir well.

Add: 2 tablespoons sugar
3 tablespoons dried parsley leaves
1 teaspoon salt
½ teaspoon black pepper
2 teaspoons dried basil leaves


Cover and simmer slowly for at least 2 hours. Be very careful that sauce bubbles gently. Stir occasionally.

Meatballs

Beat 2 eggs with ¼ cup water.

Add: 1 pound ground chuck
½ cup dry, plain bread crumbs
¼ cup grated parmesan cheese
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
2 tablespoons dried parsley leaves

Mix well with hands until mixture is well-blended. Form into balls and place on foil-covered pan. Bake at 325 degrees for 30 minutes. Add to sauce for last hour of cooking. If meatballs are simmered for longer than an hour, they begin to lose their flavor.

Its getting pretty icy out there, so i wouldnt be surprised if school was cancelled tomorrow too--I dont want it to be as we have to start taking days off spring break to make up for snow days now..but i wouldnt be surprised.

He's doing pretty good with things, his Mom asked me tonight if I was extra lenient with her when her sister was born. I told her to treat him the ssame as she always has.
