...any suggestions for dinner? I have chicken breasts out. Salsa in the fridge...a pie crust...

Not sure if I really want to do a pot pie given it'll take about two hours to do (1/2 for the chicken to thaw and cook, then an hour + to bake...)

Any suggestions?? (and we don't have to use all the stuff listed above...just something easy with chicken.) :teeth:

ETA: Nevermind. I decided on ground beef. I'll do chicken tomorrow.

I've done a variation of that....nummy. (I hardly ever go by a recipe)

Maybe tonight we'll have taco pizzas (if I have refried beans) or I don't know what....maybe tuna noodle casserole.

Last night was chicken toes (browned chicken strips) and fried potatoes, gravy and green beans...to pretend I feed the girls healthy foods:lmao:
 
Well, unfortunately, it is strep throat. Luckily, we caught it pretty early, so hopefully, the antibiotics will kick in and no one else will catch it. Knock on wood!

We've got the first dose of medicine in her, and she's resting comfortably on the couch while I disinfect the house.

I am afraid, however, that Leslie will come down with it, too. They've been sharing a bed lately, due to nightmare issues. Still, hopefully, it won't be too bad.

I'll keep Mary home from school tomorrow, and send her back once she's been on the medicine for over 24 hours.
I hope Mary feels better soon and that no one else comes down with it! :wizard:

I'll be sure to let everyone know how it is! I follow a recipe sort of...this one for dinner tonight for example, I don't like sour cream and I added green chiles.
Here's tomorrow's dinner!

Brown Sugar Chicken
6 boneless skinless chicken breasts OR 12 boneless thighs (frozen or thawed)
1 cup brown sugar, packed
1/4 cup lemon lime soda
2/3 cup vinegar or white wine
3 cloves chopped and smashed garlic
2 Tblsp soy sauce
1 tsp. black pepper
Place chicken in crock pot. Cover with brown sugar, pepper, garlic, and soy sauce. Add vinegar, and pour in lemon lime soda. (It will bubble - don't worry.) Cook on low 7-9 or high 4-5 hours. Chicken is done when cooked through or reached desired consistancy. Serve over rice or noodles.
 
Hi!!! We are home!!! 12 hour drive & I am ready tp drop!

We found a few homes that fit our bill so to speak. We have another open house this weekend too.

My uncle (the one who raised me as his daughter) was a waistgunner on a
B-24 Liberator. At 16, he walked out of a movie theater to hear of the bombing at Pearl Harbor. He signed up that day. He flew missions over Ploesti, Fogi Italy, North Africa & Normandy. He earned a Purple Heart amoung others. He was wounded several times & expected to die in North Africa of menangitis. He had a hard time talking about the war. He was part of that steadfast generation that did for others & in the name of his country. I miss him every single day,:sad1: and I make sure my kids know what he did for them.

Thanks for the info! I have to save our DVC points for a longer trip next fall, so I'd love the right deal to make it possible to squeeze in an extra trip next year!

Elin - the pictures in your signature.... did you take them? If so, can you post the middle one larger? It looks gorgeous! (They all do, but this one especially keeps catching my eye!)

I've made that, and it's delicious, but unless you want to do some major scrubbing, use a crock pot liner! :)
 
Here's another delicious recipe that I made last week:

Chicken Almond Rice Casserole

4 large boneless chicken breasts
1 cup mayo
1 can water chestnuts (optional--I didn't use them)
1 small pack slivered almonds
1 can cream of mushroom soup
2 c shredded cheddar cheese
1 cup Uncle Ben's Wild Rice (NOT the fast cook)

Cook chicken and dice. Mix with all ingredients, pour into 9x13 casserole dish and cover with foil. Bake at 350 degrees for one hour.
