Just verifying-masks at all inside buildings, rides, attractions, all transportation, and waiting at restaurants until drinks/food is served-correct?

Mostly.

You are free to remove your mask as soon as you sit in a restaurant.
 
Just got back a few days ago. I can confirm that all indoor locations and indoor attractions do require masks but on some attractions they are not enforced (like people mover). I think this is because some of the ride is outdoors and masks aren't required on those currently. As far as transportation, masks are required on everything but the big ferry boats. We rode the monorail twice and noticed that nobody was enforcing the masks so compliance was about 50%. As far as restaurants go, once you sit down you can remove your masks, but if you get up to move around or use the restrooms, you need to put it back on.
