How do you make it? What we have over here for "fairy cakes " (MUCH smaller and less exciting) is just icing (confectioners) sugar and water, or else buttercream - icing sugar and butter.

MIL has her birthday on Sunday and I'd like to make and ice on Saturday.
 
What kind of icing are you interested in? What kind of cake are you making? There are cream cheese, whipped cream, and marshmallow icings to name a few. Are you looking for something similar to our "icing in a can?" Are you looking for a particular flavor of icing?

Someone once bought me some Betty Crocker (I think) icing that came in a plastic tub - couldn't tell you what it tasted like as it went on a cake going to scout camp, but that's the sort of consistency. Nothing that will go off if not refrigerated as my fridge will be full of BBQ meat - so I guess that rules out cream or cheese. Although buttercream is OK in the tin unfridged:confused3 Our icing doesn't really come in flavours either - its just sugar and colouring, maybe made with lemon/orange juice instead of flour.

What's your favourite, never-fail one you'd use for birthday or other gatherings?
