I applied earlier this year and got accepted for a fall culinary internship. I think a really important step is making sure you have a really good résumé. I had 3 people look at mine. During the interview, he went through a couple of different stations and asked how I would prepare different items. For example, he asked me what vegetables were in season then he asked how I would prepare one of them. He also asked what sauce I would serve with fish, lamb, and chicken. The one question that really threw me off was when he gave me a mystery basket directly from the tv show "chopped" and asked what I would make. Mine was turnips, shrimp, beef jerky, and olives. I was bad at that one but I think it was more to see where you were to help with job placement.
I think it's really important to show that you want to learn more than anything. Even if you don't know an answer, take a guess and just say that you haven't had the opportunity to work with that ingredient, but you'd love to learn. Good luck in the fall and I hope you get in!
