Crystal Palace Salmon Recipe

Does anyone have the recipe for the salmon at the Crystal Palace? We ate there this past week and that was some of the salmon I have ever had. I didn't even think about asking for the recipe. If anyone has it, would you pass it on or have any idea where I can find it. Thanks!!
 
Ancho Chili Rubbed Salmon
from Magic Kingdom
Yield: 10 servings.

3 ancho chilies
1 cup boiling water
3 tablespoons canola oil
2 tablespoons brown sugar
Coarse salt and freshly ground black pepper to taste
1 whole side salmon fillet
2 cups tightly packed basil leaves
3 teaspoons chopped garlic
1 cup olive oil
1 teaspoon coarse salt and 1/2 teaspoon freshly ground pepper to taste
1/2 cup freshly grated Parmesan cheese (optional)
Salad of fresh greens, tomatoes, black beans

1. Rehydrate ancho chilies in boiling water. When plump, slit chilies and scrape out seeds. In a food processor, combine chilies, canola oil, brown sugar, salt and freshly ground pepper. Process until ingredients form a paste. Spread chili paste over whole salmon fillet and massage into fish. Let salmon marinate, covered, in the refrigerator overnight.

2. Bake fish on an ungreased pan in a 375 F oven for 15 to 18 minutes, or until firm to the touch.

3. For the sauce, combine basil leaves, garlic, olive oil, coarse salt, pepper and Parmesan in the work bowl of a food processor. Puree until smooth.

4. To serve, mound salad greens in the center of a serving plate. Top with salmon and generously drizzle with basil sauce.
 
Thanks! Although I didn't post the original question I've printed off the recipe as my son LOVES salmon and thinks Disney's various versions are the best.

DH used to think he really liked salmon because it was good for you, but has since decided he doesn't. :rolleyes: For this reason I didn't request a copy of the nut-crusted salmon recipe from AKL, but it was excellent! I have the nut-crusted mahi-mahi recipe, but the spices may be different. [NOTE: I don't usually both toasting the spices - as I'm too lazy - but their recipes turn out great anyway.]

NUT CRUSTED MAHI-MAHI

Yield: 10 servings (1 5/8 cups)

Cashews, toasted and ground ½ c
Pistachio Nuts, toasted and ground ½ c
Pumpkin Seeds, toasted and ground 5/8 c
Honey-roasted Peanuts, ground 2 Tbl
Cumin, toasted 1 Tbl
Coriander, toasted 1 Tbl
Curry Powder, toasted 1 Tbl
Sugar 2 Tbl
Cayenne Pepper 1 Tbl

Mix all ingredients in a large bowl. Coat the mahi-mahi with olive oil. Then coat with the nut crust. Bake at 350o oven for 20 minutes.
